Walter Butler and his group Butler Industries announced on Thursday the acquisition of a majority stake in the fashionable Parisian restaurant L’Ambroisie.

Established since December 1986 in the heart of Paris, in the Place des Vosges, this flagship of French haute cuisine has been distinguished by numerous awards and accolades, and has trained several generations of Michelin-starred chefs over the decades.

The transaction includes the acquisition of the business and the premises of the establishment. Bernard Pacaud will remain president, partner, and head chef of the establishment that he has brought to the pinnacle of global gastronomy, and will continue to have full control over the cuisine of L’Ambroisie. 

Founded in 1991, Butler Industries is a global industrial investor based in Paris, Shanghai, London, Singapore, and São Paulo, with over 35 investments in various sectors and through several economic cycles. 

This includes the acquisition and revitalization of the Flo restaurant group in the early 2000s, facilitated through ownership of Paris Saint-Germain. They have also acquired the Parisian cabaret, Paradis Latin, in 2018. More recently, in late 2021, the group also acquired Pierre Hermé Paris.
